Large plants that can grow up to 10 feet tall are topped with stunning dark red - fuchsia blooms! Young leaves can be utilized as greens, and blossom heads are filled with seeds that can be toasted and eaten as grains in addition to their visual appeal. Seed-filled flower heads are an excellent source of food for passing birds like goldfinches due to their incredible height. Amaranth is utilized as a cereal grain in recipes and it grows well as a nutrient-dense microgreen! To prepare medicine for ulcers, diarrhea, and sore mouth and throat, they utilize the entire plant. High cholesterol is also treated with it.

Planting Instructions:
Amaranth germinates when the soil temperature is at least 70°, so gardeners in cool climates will want to start their seeds indoors 4-6 weeks before transplanting. Direct sow seeds after the last spring frost. Sow thinly at 1/4" deep in rows 16-18" apart. Thin to the strongest seedling per 10-12" apart. Some gardeners choose a closer spacing if only growing to harvest the greens. Prefers full sun and well drained soil. Once established, will tolerate drought, but the greens will be more tender if the soil is kept moist.
